This weekend we officially felt the cool fall weather. Although Saturday was mostly a gorgeous day, Sunday was cold and rainy. The perfect excuse to stay in and relax around the house.
I spent a good part of Sunday morning lazily tucked under my white fur blanket catching up on a little reading.
Then spent most of the afternoon cooking up a storm in the kitchen. I started with homemade chili. There is just something about cold autumn days that make you crave comfort food. I came across this recipe some time ago and decided that Sunday was the perfect day to make it. And it turned out delicious! Served with hot bread from the oven, it’s the perfect meal!
Since apple season is still very much in full swing, I decided to make this apple cake. Note to foodies: this cake is not for those on a diet, but believe me, it’s well worth the calories! The hardest part was waiting for it too cool down before eating it! So yummy with a scoop of vanilla bean ice cream!
To top it off, my mom came over and brought me some yummy squash and apple soup. There is nothing like a mom’s cooking! My mom has taught me so much about cooking and she is always there for me to call up and ask even the most mundane cooking question! But what can I say, I learned from the best!
