There is so much joy in a delicious bowl of French onion soup. So few ingredients come together to create a deep, flavourful dish that is comforting to your tummy and soothing for your soul. I came across this recipe and was immediately inspired. I used a combination of white and red onions and added a little garlic. Is there anything in the world that smells as good as the aroma of onions and garlic cooking?! I think not.
It goes without question that chopping onions is a bitch! I once heard that chewing a piece of gum while chopping onions prevented you from crying. Since I had three onions to slice up I reached for my gum and picked up my knife. Lies! After chopping half an onion, the flood gates opened to the point that I couldn’t even see and had to leave the kitchen! But the result was worth it!
The best part, a slice of whole-grain ciabatta bread topped with Gruyere cheese browned under the broil. Dunk the bread into the soup and enjoy with a glass of red! Bon appétit!

By the way, my Mom is legendary for her onion soup. Over the years she’s heard them all, but what works for her is letting some cold water run and she holds a match (sulfur side out) in her mouth while she slices.
However, when she makes onion soup she usually cooks for 20 (thems lots of onions!!) so best trick is the Cuisinart !!
