I love me some good ol’ mac and cheese! The gooeyness of the cheese, the crunchiness of the crust, the comfiness of the food in my belly! Unfortunately, I’m not longer at that age where I can eat it all the time and not watch my derrière expand as I chew. Luckily for me, I came across Stiletto Chef (a.k.a. Candice Kumai), and I can’t help but think that our paths crossed for a reason. She has enlightened me to the possibilities of eating all the yummy food I adore, all the while still fitting into my skinny jeans! And for that, I adore her!
After perusing her site a little, I settled on two recipes I was dying to try. The first is the Platinum Mac N’ Cheese, a healthier version of my beloved comfort food that satisfy my cravings for gooey goodness. And it’s so simple to make! I used whole-wheat pasta instead of regular pasta and added all the optional ingredients and the result was scrumptious and delicious! Final word of advice – add the optional basil (fresh if possible), the panko and extra cheese, and broil that sucker up! It adds so much delicious crunchy flavour!
The second recipe I chose was the pumpkin butter. Ok, I am obsessed with pumpkin. I’m not really sure where it all started, but every fall I scour recipe books and Websites to find new pumpkin recipes. And voilà– Pumpkin Butter! It was so easy to make and impossible to keep my hands off while cooking. Perfect on a crusty ciabatta toast! And take note that the recipe does make a big batch, so be sure to have plenty of mason jars on hand to share with your family and friends!
