I’ve had a recent obsession with oatmeal cookies. I’m not sure why. I remember when I was younger I avoided oatmeal cookies because I always saw them as the “healthy” cookie and thought that that pretty much defeated the purpose of eating a cookie in the first place. Cookies are supposed to be a delectable treat! Well, years later I find myself jonesing for oatmeal cookies, and not only that, but the (semi) healthy kind. I found many recipes online that all looked great, but thought that most of them had way too much sugar. That is until I came across this one!
These delicous cookies were so easy to make and ready to eat after only 8 minutes in the oven. Of course, being the chocoholic that I am, I had to make a few changes to the initial recipe, like using dark mini chocolate chips and dried cranberries instead of prunes and apricots. The results are amazing. Don’t let the golden colour of the cookie fool you. They came out of the oven perfectly baked and chewy! In fact, some of the comments I received when I brought some to work were, “Mmmmmm!” and “These are the best cookies!” I’m just sayin’!
