I love pasta! I swear I could eat it every day. However I’m pretty sure that if I did my ass would widen dramatically. Luckily, my mom introduced me to a healthy alternative a while ago that I have since learned to make myself – spaghetti squash! It’s so simple to make and so delicious!
Preparing it is so simple. Cut the spaghetti squash in half length-wise, drizzle a little extra virgin olive oil, salt, basil and paprika, or use whichever herbs you like. Then place each half face down on a baking sheet and pop into a 375 oven for about 45 minutes. Next, let it cool a little before using a fork to fluff up the squash into spaghetti-like strands. And voilà! Top it with a little Parmesan cheese or marinara sauce. I love eating it with my mom’s meat sauce loaded with veggies, it makes the perfect meal! Delicious and nutritious!
