Finally got my computer fixed thanks to some great friends! Thanks! And just in time for Foodie Friday! With the weather (finally) beginning to heat up, I’m starting to feel the need to cook lighter dishes that don’t require heating up. I found this recipe a while ago and kept it in the back of my mind, just waiting for Mother Nature to stop being so damn cruel to us!
This salad embodies all the flavours of spring – sundried tomatoes, asparagus, hearts of palm, along with the lemony white wine vinegar dressing with just the right hint of garlic, it’s perfect as a side dish or as a light lunch! this is the first time I’ve ever made orzo pasta, but it surely won’t be the last. To all those who know me, you might see this salad making an appearance at a future potluck!
