You know summer is around the corner when you bite into a bright red strawberry and it actually tastes like a strawberry. Lately, strawberries have been making a regular appearance in my fridge and I’ve been trying to find just the right recipe for them. I didn’t want to make preserves, and I tried making fruit leather (otherwise known as fruit roll-ups) and failed miserably (they tasted great, but leathery they were). Then it dawned on me, why was I trying to find a recipe that was so different. So back to basics I went I opted to make strawberry muffins.
I used this recipe which was so easy and the results were more than amazing. With just the right amount of sweetness, these moist muffins were exactly what I was looking for. And each bite is like a bite of sunshine (ok, that was corny, but it’s still true)!
