It’s obvious to anyone who has known me for five minutes that I love sweets! The good news is that I can proudly say that I have my addiction under control (unlike my shoe addiction). The majority of my recent food posts have been healthy dishes filled with natural ingredients. But despite the cookies and muffins and breads and treats, nothing has replaced my beloved chocolate… until now.
Start with one pound of pitted dates (make sure they are all pitted, sometimes those suckers just find a way to sneak in there), 1 cup of almonds and 1/2 cup of unsweetened shredded coconut. Put everything in a food processor and blend until the mixture forms a sticky paste. Next, take a heaping tablespoon of the mixture and form into a ball. Roll it in more shredded coconut and voilà! This recipe makes about 25 balls.
Dates are full of sexy healthy deliciousness, and together with the almonds and coconut, they are a sweet treat that satisfies even my worst sugar cravings! The next time I make these I plan on adding some natural peanut butter and maybe a hint of cocoa powder. That’s the beauty of these babies, you can get creative! So let your imagination run wild!
