It’s 9:30 on Saturday morning (as I’m writing this) and the house is calm and quiet. My beau is still sleeping, trying to get over a nasty cold. I woke up at my usual early time, did some yoga and whipped up a batch of orange cranberry muffins. I have to say that orange cranberry is by far one of my favourite flavours to combine. So fresh and sweet, yet tart at the same time. I’m sitting at my kitchen table trying to resist peeking at them while they are basking in the warmth of the oven (I just love peering through the oven door to watch my confections bake).
See, I just couldn’t resist. I’m so happy to have come across this recipe. Not only does it require very few ingredients that you probably already have on hand, but it’s also on the healthier side since it uses little sugar (I replaced half the sugar with stevia) and Greek yogurt (I used non-fat). I also replaced the all-purpose flour with whole wheat flour. Plus, it was the perfect way for me to use up the leftover fresh cranberries I had frozen from Thanksgiving.
By the time the timer rang, my beau had woken up and made his way to the kitchen, lead by the delicious scent of my morning baking. They were delicious! So moist with a hint of sweetness; sinful but so much healthier.
