i woke up this morning craving something different for breakfast. Tired of the same old eggs, i wanted something sweet but without being loaded with sugar and other bad things. As i stood in my kitchen, i glanced over at my fruit bowl and zeroed in on a grapefruit. And then a light went on in my head… broiled grapefruit!
The combination of the acidic grapefruit with the cinnamon has always been intriguing to me. But mixed with the warmth of the grapefruit, it just works. Also, it’s so simple to make that it would be a great addition to any brunch (not to mention impressive for your guests).
Light brown sugar
1. Preheat your broiler and set the top rack to about 4 inches from the top.
2. Cut the grapefruit in half and sprinkle a little brown sugar and cinnamon to taste (Note: a little brown sugar goes a long way).
3. Broil on a baking sheet until tops are slightly browned, about 4-5 minutes.
4. Top with a dollop of greek yogurt and a little granola.
