I love green tea. With its light taste and health benefits, its the perfect cup of comfort. So when I came across this recipe for green tea muffins, I was very excited to see (and taste) the results.
The results were amazing! Like my beloved drink, these muffins had a light taste with just a hint of sweetness from the white chocolate. And while the colour is quite the conversation starter, one bite if these light muffins is sure to silence all the critics!
Green Tea White Chocolate Chip Muffins
~makes 12 small muffins~
1 3/4 cup whole wheat flour
1/4 cup brown sugar
1/4 almond powder (I made my own in a food processor)
1/2 tsp baking powder
1/2 tsp baking soda
2 tsp matcha powder
1 cup vanilla almond milk
4 tbsp salted butter, melted
1 egg, lightly beaten
1/2 cup white chocolate chips
1- Preheat the oven to 350F Butter the muffin tin or use paper liners.
2- In a medium bowl, combine the flour, brown sugar, almond powder, baking powder, baking soda and matcha powder. Set aside.
3- In another bowl, combine the almond milk, melted butter and the egg. Make sure the butter isn’t too hot, you wouldn’t want it to cook the egg. 🙂
4- Mix the wet ingredients with the dry ingredients and mix until just combined.
5- Add the white chocolate chips and mix to combine. Fill the muffins tray evenly.
6- Bake for about 12 minutes or until the a toothpick comes out clean. Remove from the oven and let cool completely before removing from the muffin tin (I couldn’t wait for that step).
