Is there anything more wonderful than the aroma of garlic roasting in the oven? Seriously amazing! The aromas that fill the house are just so delicious that it makes you want to take a bite of the air. With the temperatures still extremely cold, the only thing better than roasting garlic is probably a bowl of creamy, hot soup.
If you’ve been following me for a while, you already know that I’m a huge fan of Candice Kumai. She is a former fitness model turned chef and healthy food advocate. She believes that whatever you eat should benefit your body, and I couldn’t agree more. I have every one of her cookbooks and consult them regularly to create delicious dishes that will benefit my body and satisfy my hunger. One of those recipes is this amazing roasted cauliflower garlic and leek soup from her book Cook Yourself Sexy. So comforting on a cold day, but bikini body friendly, it’s quite possibly the best soup to eat while we slowly transition from this dreadful winter to the much anticipated spring. And like my girl Candice always says, “There’s nothing is sexier than rocking a gorgeous body and enjoying your food.”
Roasted Cauliflower Leek Soup
Adapted from Candice Kumai’s Cook Youself Sexy
Serves 6
1 garlic head
2 tbsp extra-virgin olive oil
1 cauliflower head cut into 1-inch pieces
2 large leeks, trimmed, halved and thinly sliced
1/2 tsp sea salt, plus more to taste
3 1/2 cups low-sodium chicken broth
1 cup unsweetened almond milk
Fresh sage, thyme or nutmeg, to garnish
