Ok, so clearly there’s a bit of a theme happening in the food section of my blog. What can I say, I’m obsessed with pineapple and coconut! Last week it was all about the cookies with that amazing pineapple coconut jam. This week it’s all about fro yo! And in any case, what the heck is better in the summer than (insert favourite treat here) with pineapple and coconut? #nothing
This all came about one evening when I was slightly bored and therefore a little hungry. Coincidentally, it was also a great way to use up the frozen pineapple in my freezer. It’s dangerously simple to make but more or less guilt free since it doesn’t contain any added sugar or other yuckies. Add a sprinkle of coconut and give it all a whirl in the food processor and voilà! A healthy frozen treat that you can enjoy for breakfast dessert (don’t judge!).
Pineapple Coconut Frozen Yogurt
3 cups frozen or fresh pineapple
1 cup 2% Greek yogurt
2 tbsp unsweetened coconut flakes (or more if you LOVE coconut)
1/2 tsp vanilla

1. Add all ingredients to a food processor. Pulse a few times to break up the pineapple, then just let it run until the mixture is smooth.
2. If you are using fresh pineapple, you will need to transfer to a container and set in the freezer for at least 4 hour. If you used frozen pineapple, grab a spoon and dig in!
