Medjool dates are a staple in my kitchen. I quite literally have dates in one way or another each and every day, whether it’s thrown in a smoothie as a natural sweetener or used to replace sugar when baking. So I was super excited when Natural Delights sent me a box of their delightful dates (see what I did there?). So sweet, chewy and tastes just like caramel, I seriously can’t get enough. They are quite simply the most perfect little snack.
Medjool dates are nature’s power fruit. Why, you might ask? Well…
They are full of natural sugars, but low-medium on the glycemic index, making them the perfect alternative to refined and artificial sweeteners.
They are filled with dietary fibre, which means that you can have a sweet snack that will keep you satisfied and alert all afternoon.
They are loaded with potassium. In fact, they contain 50% more potassium than bananas. They also contain 6 essential nutrients that help balance blood sodium levels and release energy from fat, protein and carbohydrates.
They are an amazing source of antioxidants and contain more antioxidants than blackberries, plums and apples.
So with all these dates in my kitchen, what’s a girl to do? Make a yummy snack recipe, of course! These brownie bites are the perfect thing to satisfy that sweet tooth. Rich and chocolatey with a hint of crunch and taste of coconut, they are just irresistible. Plus, for all my vegan friends, they are completely raw and vegan.
Raw Coconut Brownie Bites
Makes 20 bites
1/2 cup unsalted raw sunflower seed
1/2 raw walnuts
4 tbsp dutch-processed cocoa powder
1 tsp pure vanilla extract
1/2 unsweetened shredded coconut
1 tbsp natural creamy almond butter
1 cup Natural Delights medjool dates, pitted
1. Start by adding the sunflower seeds and walnuts to a food processor and pulse until they are finely ground.
2. Add the cocoa powder, vanilla extract, coconut and almond butter, and process until all ingredients are well incorporated. Add the dates and process until the mixture resembles a dough. It may look a little crumbly, so just make sure that the mixture sticks together between your fingers without crumbling.
3. Form bites using about 1 tablespoon of the mixture, rolling into balls. Brownie bites can be kept in the fridge for about 1 week or in the freezer for about 1 month.
