Recipes like these are kind of dangerous in my house. For one, they take so few basic ingredients that you probably already have everything you need to make them in your kitchen right now. Second, they take less than 5 minutes to whip up and don’t require any baking. Finally, they are so yummy! And if you’re a peanut butter addict like me, they really won’t last long. No joke, I made these when I was in the midst of a late-night craving… see, dangerous!
Here I used plain puffed quinoa, but chocolate puffed quinoa could be a great alternative for those who love chocolate peanut butter. Also, make sure you use natural peanut butter. Don’t use the cheap fake stuff with a bunch of added yuckies to it. Trust me, it makes a big difference in the final result.
Puffed Quinoa Peanut Butter Bites
Makes 12-15 bites
1/2 cup crunchy natural peanut butter
4 tbsp vanilla agave nectar (I found mine at David’s Tea)
1 tsp pure vanilla extract
1 cup puffed quinoa
1. In a medium bowl, combine the peanut butter, agave syrup and vanilla extract. Mix well to combine.
2. Add the puffed quinoa and mix well to make sure everything is well combined.
3. Using a tablespoon, roll into balls and place in the fridge to firm up. If the mixture is a little soft, place in the fridge for 15 minutes to firm up the mixture and make the ball rolling a little easier.
